Portion: Each packet contains 7 grams of tea, intended for a single serving. Water Temperature: Use boiling water at 100°C (212°F) for all infusions. Vessel: A gaiwan is commonly used in Chaozhou for brewing Dancong tea and is recommended, as it allows for faster pouring and enhances the experience of smelling the tea's aroma. Steeping: - If using the entire 7g portion in a 110-150ml gaiwan, start with flash steeping (quick pour and strain) for the first three infusions, gradually increasing the steeping time with each round. - Alternatively, use a tea-to-water ratio of 1g per 22ml. Start with a 5-second steep, then increase the steeping time by 5 seconds or more with each subsequent infusion.
Description
Almond Aroma Dancong (杏仁香, Xing Ren Xiang) is a distinctive Phoenix Dancong oolong, named for its fragrance, which carries the fragrance of bitter almond used in Traditional Chinese Medicine yet remains pleasantly nutty and sweet. This tea is known for its rich fruity aroma and refreshing taste, which develop naturally throughout its kill-green (fixation), rolling, and roasting process. Grown at 700 meters in Dongjiao, this early spring harvest from March 2024 exemplifies the deep, layered complexity of high-mountain Dancong. The dry leaves are tightly twisted, delicate, and dark brown with a glossy sheen, indicating an early harvest of delicate young leaves and reflecting their meticulous craftsmanship. Once brewed, the tea releases an intensely aromatic almond fragrance, accompanied by notes of ripe fruit and subtle herbal undertones. The tea liquor is a vibrant orange-yellow, offering a fresh, smooth, and slightly sweet infusion. As it cools, the flavors evolve, leaving a long-lasting, comforting aftertaste with a signature lingering almond finish. Its resilient nature makes it an excellent choice for multiple infusions, revealing new layers of complexity with each steep.
