Steeping instructions
Water Temperature: Use boiling water at 100 °C (212 °F) for all steps. Rinse (Optional): Give the leaves a quick 10-second rinse to awaken them. Steeping (Gong Fu style): Tea-to-water ratio: 1 g : 20–30 ml. For the first three infusions, steep for 30 seconds, then gradually increase the time as the flavor lightens. Simmering Method (Thermos): Tea-to-water ratio: 1 g : 80 ml. Add tea and boiling water to a tea thermos, close the lid, and let it steep for about 20 minutes before drinking. Boiling Method (Stovetop): Tea-to-water ratio: 1 g : 80 ml. Bring water to a boil, then add the tea. Reduce to a gentle simmer and cook for 10 minutes before serving.
Description
Made from mature late-spring leaves of Yunnan large-leaf tea trees, harvested in the Mangshi Zhongshan tea area and fermented anaerobically for nine months. This traditionally pounded form is pressed into thin sheets after fermentation, sun-dried, and cut into pieces, following the De’ang ethnic method recognized as a national intangible cultural heritage. The liquor has a mellow, creamy aroma, smooth texture, and lingering sweetness, with acidity that has softened through aging since 2017.
