Phoenix Dancong Tea
Feng Huang Dan Cong (凤凰单丛, or Phoenix Single Bush) is a famous style of oolong tea produced in Phoenix Mountain of Chaozhou, Guangdong province. When we talk about Gongfucha, oftentimes it refers to the tea tradition originated from Chaozhou, or the greater Chaoshan area, where you can find tea basically everywhere in people's daily life. In the Gongfucha brewing style, dancong is the most commonly used tea by the people there. Dancong is composed of ten major aroma types and over eighty strains. For this month's tea club, we included a full breadth of dancong teas from different cultivars, harvest seasons, and tea types. We picked two early spring harvest Mi Lan Xiang (Honey Orchid Aroma) and Ya Shi Xiang (Duck Shit Aroma) oolongs and a winter harvest Da Wu Ye (Big Dark Leaf) oolong. Besides, we also have a spring harvest dancong black tea made from the Mi Lan Xiang cultivar. Brewing instruction: The packets are meant for single servings (5g for black tea; 7g for oolong tea). For Chaozhou Gongfucha style, use 1g to 15ml-20ml ratio and flash steep for 5 infusions before incrementing steeping time gradually.
