Fuding White Tea

Let's continue our journey with teas from Fujian province of China! Taimu Mountain in Fuding county is known as the origin of white tea, and there's a common saying "China is the center of the world’s white tea production, while Fuding is the center of China's white tea production”. After fresh tea leaves are picked, they are withered either outdoors or in warm rooms and then baked dry. The processed tea can be kept in its loose format or compressed into cakes or smaller chunks. White teas are suitable for being stored for an extended period of time, and a popular Chinese proverb says it becomes medicine after 3 years and treasure after 7 years. White teas are named after their picking standards: Bai Hao Yin Zhen (all buds), Bai Mu Dan (1 bud with 1 or 2 leaves), Gong Mei (1 bud with 2 or 3 leaves), and Shou Mei (leaves with few buds). Each picking standard is unique in its own way and offers a different flavor and texture.
